Notes: This is a full-time, career position. Schedule of hours is Monday - Friday, 8:00 a.m. to 5:00 p.m. Overtime, travel and travel outside of normal business hours may be required. Hired applicant must successfully complete and pass Serve Safe Food Handling.
Effective September 1, 2009, the University of California, Riverside has implemented a one-year Furlough/Salary Reduction Plan due to the state budget crisis. Under the plan, this position’s work time will be reduced by a specified number of days according to the salary for this position, with a commensurate reduction in pay evenly distributed over a 12-month period. Essential Functions: The Assistant Director of Residential Dining (AD) directs, manages and coordinates the seven-day daily operations of the campus Residential Dining Program for two residential dining centers, two residential satellites, child development centers, conference menus production & distribution and the Food Pro Program.
The AD directly supervises two employees, and indirectly supervises approximately 11 managers and 165-175 career and student employees. Responsible for developing, implementing and maintaining accountability controls for management staff; works closely with staff to ensure maximum operational efficiency and effective programs.
This position is responsible for planning, directing and organizing the daily business management practices for operations, human resources, financial controls, menu/products, maintenance, research and development for all residential facilities. Approves and audits all non-food procurements; oversees all human resources functions including, hiring, supervision, evaluations, time reporting, training and development activities for all daily operations staff.
The AD is responsible for an operations budget in the amount of $12.8 million, ensuring that expenses are identified and appropriately budgeted. Represents Dining Services on planning and design committees for new capital projects and special programs.
Serving as a member of the Dining Services Management Team, the incumbent is responsible for quality leadership services and programs.
This position works under the general direction of the Director of Dining Services.
Minimum Requirements:
• Graduation from college, preferably with training in food service management, hospitality, dietetics, etc., and 4 years of management experience in a complex food services operation; or an equivalent combination of college education and experience, knowledge and ability to successfully perform the essential duties assigned to the position; or a minimum of 14 years management experience in a complex food services operation.
• Related food service operations management experience in a high volume, high quality diverse multi-unit operation, including but not limited to, financial and labor management, menu development, technology information systems (POS, On-line Scheduling, Food Pro Menu & Inventory Management Systems, Card Systems, On-line Procurement), equipment procurement, maintenance and repair, policy and procedure development, food production, handling and storage, quality control, health and safety, marketing and merchandising.
• Demonstrated supervisory, leadership and human resource management experience to effectively administer and manage within a diverse and complex organization including recruitment, hiring, evaluation, compensation, time management, training and safety programs.
• Experience with forecasting, preparation and analysis of operational budgets using on-line financial systems.
• Experience with sourcing and specifying food, equipment and supplies and use of formal bidding/award systems.
• Demonstrated experience in operating a residential dining program with understanding of cycle menus and appropriate meal cost structure.
• Experience with maintaining simple or moderately complex databases through data entry, data queries and database design modifications.
• Experience with Internet search engines for data gathering purposes.
• Superior communication skills to effectively and professionally communicate with internal and external campus community in a highly professional manner verbally and in writing.
• Demonstrated skill to create performance standards and incentive programs to increase morale, attendance and productivity.
• Skill in creating spreadsheets and reports using Word, Access, Excel, FileMaker Pro or other software applications.
• Skill in exporting/importing data from or to different software applications or data collection and retrieval.
• Knowledge of food service operations management, including cost control and expense analysis, strategic planning, labor scheduling, production, purchasing, food purchasing and meal plan control.
• Advance knowledge of computer skills and menu and inventory management systems to administer and manage food service systems.
• Ability to communicate effectively to discuss improvement, solve problems and follow through with implementing solutions.
• Proven ability to work independently, initiating innovative new programs, unit growth, development and change.
• Hired applicant must possess a valid California Driver's License; and must successfully pass a background check through the Department of Justice.
Preferred Qualifications:
• Serve Safe Food Safety Certification.
• Current or previous experience in the National Association of College & University Food Services (NACUFS) or other food service/hospitality related professional affiliation.
• Union contract administration experience.
• Food Service operations management experience in an institution of higher education.
• Spanish/English bilingual.
• Knowledge of University systems, policies and procedures and familiarity with UCR campus community, its goals and philosophies.
